What is an Horno?

Originally meaning “oven” in Spanish, an horno is a dome-shaped wood-burning outdoor oven made of adobe. Hornos were brought to the San Luis Valley, as well as other parts of the Americas, by Spanish settlers in the 16th and 17th centuries. Spaniards adopted the oven design from the Middle East and Northern Africa. Settlers used hornos to cook food outside when they first arrived and the practice was eventually adopted by local indigenous Pueblo peoples. It is still a significant part of culture in many communities throughout Southern Colorado and New Mexico.

About Our Horno

The Horno at the Rio Grande Farm Park acts as an excellent outdoor gathering place for visitors and can be used to cook all sorts of delicious foods – from oven-roasted corn (known as “chicos” to SLV locals) to wood-fired pizza. It was constructed from May to October in 2022 by a group of volunteer workers who also built the adobe brick wall that surrounds the Horno and Education Center. The project was funded by a generous donation from Sangre de Cristo National Heritage Area. “Re-mudding” the Horno has since become a beloved annual farm park volunteer tradition in the summertime to maintain the adobe exterior.

How do you use the Horno?

To cook food in the horno, you first need to heat the adobe walls by building a wood fire inside. Then, once the desired temperature is reached (usually about 550 degrees Fahrenheit), remove the embers or if cooking meat, move them to the back of the oven and spread them out. Place your food inside the oven. Cooking times vary depending on the dish being prepared. Make sure to secure the door tightly so that the heat stays inside the horno and cooks the food thoroughly.

Want to reserve the horno for an event? Here are the steps to get started: 

  1. Review the Education Center Event Calendar on this page to check for available times. -Because we periodically rent out our Education Center as an event space, Horno reservations must be accommodated to pre-existing Education Center rentals.

  2. Fill out Google Form to reserve your spot! Reservations are first-come, first-served. After you fill out the form, we will be in contact with you within 48 hours (Monday-Thursday).

  3. Our team will send you the Horno Usage Guidelines and Contract to sign and confirm your reservation.

    -If you are interested in using both the Education Center and Horno for a single event, please communicate so in your email.
